Some viral recipes just are, well, ridiculous. Some, however, turn out quite delicious, like this viral onion crunch chicken recipe. The baked chicken breasts sounded like a recipe that needed to be tried, but there were no french fried onions in my pantry. Improvising, this baked chicken recipe with a potato chip topping was what I came up with. Delish.
The ingredients in this chicken dinner are reminiscent of another recipe that went viral a while back: Man Pleasin' Chicken. Once you see the ingredient list, you'll understand why. The main players in Man Pleasin' Chicken is maple syrup, Dijon mustard and rice wine vinegar. For the onion crunch chicken, it's Dijon mustard, honey and white wine vinegar.
Here is your shopping list for this easy high-protein recipe: chicken breasts (read about the health benefits or protein), garlic salt, black pepper, Dijon mustard, honey, white wine vinegar, cheese and either potato chips (my version) or french fried onions (the original recipe). The boneless chicken breasts bake up in about 20 to 25 minutes in the oven. So quick and easy!
Serve the juicy, moist chicken with a crunchy top for dinner with your favorite side dishes. I served mine on a bed of jasmine rice with buttered carrots and cherry tomatoes from my garden.

Ingredients
- 2 chicken breasts, cut in half through the middle lengthwise (butterflied)
- garlic salt
- black pepper
- 3 tablespoons Dijon mustard
- 3 tablespoons honey
- 1/2 tablespoon white wine vinegar
- 1 cup cheese, grated (Monterey Jack, mozzarella, gruyere, cheddar, etc.)
- 1/4 cup potato chips, crushed, or french fried onions (from a can)
Here's how to make it:
- Stir the mustard, honey and white wine vinegar together in a small bowl.
- Put the four chicken breasts (two that were butterflied to create thinner cutlets) into an oiled baking dish. Season to taste with the garlic salt and black pepper. (If you don't have garlic salt, you could use garlic powder, sea salt and black pepper.)
- Pour the sauce over the chicken breasts. Turn to coat the chicken completely in the sauce.
- Top with the grated cheese.
- Sprinkle with the potato chips or french fried onions.
- Bake in a preheated 400-degree F oven for 20 to 25 minutes, or until the chicken is cooked through. Chicken is cooked through at 165 degrees F internal temperature on a food thermometer.
- Serve hot. (Drizzle with the pan drippings, if desired.)
- Store any leftovers covered in the fridge.
