Here is your short shopping list for this budget recipe: ground chicken, an egg, breadcrumbs (use whatever type you have on hand), Parmesan cheese, dry Italian seasoning, fresh garlic, olive oil, butter, flour, chicken broth, Worcestershire sauce and milk of choice (heavy cream, evaporated milk, whole milk or half and half all work great).

Ingredients
Meatballs
- 1 pound ground chicken
- 1 egg
- 1/4 cup breadcrumbs
- 1/4 cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning (or fresh chopped parsley)
- 2 cloves garlic, minced or pressed
- 1 tablespoon olive oil
Gravy
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups chicken broth
- 1 tablespoon Worcestershire sauce
- 1/2 cup evaporated milk, heavy cream or half and half
Here's how to make it:
- Combine all the meatball ingredients except olive oil in a mixing bowl. Season with salt and pepper, to taste. Mix until just combined. Shape into meatballs.
- Heat the olive oil in a large skillet over medium-high heat. Add the meatballs and cook until browned on all sides, about 6 to 8 minutes. Remove the meatballs to a plate and set aside.
- Melt the butter in the same pan over medium heat. Once melted, whisk in the flour and cook for about 2 minutes, or until lightly browned. Slowly whisk in the chicken broth, Worcestershire sauce and milk or choice. Bring to a simmer and cook, stirring, until gravy thickens up, about 2 to 3 minutes.
- Put the meatballs back into the pan and stir to coat with the gravy. Gently simmer for about 5 minutes or until meatballs are cooked through. (Chicken is done at 165 degrees F internal temperature on a food thermometer.) Serve. Garnish with fresh parsley, if desired.
