Instead of grabbing a bag of chips or other not-so-healthy snack when those cravings hit, I try to keep healthier options readily available. I'm not much of a sweet snacker, so this baked curry spiced pistachios was right up my snacking alley. Not only are these roasted nuts full of flavor, but they are loaded with nutrition, too.
The health benefits of pistachios make me not skip the nut aisle at the grocery store. According to a study by researchers at Penn State, "Eating pistachios as a nightly snack for 12 weeks altered which bacteria lived in the digestive system of people with prediabetes," which may improve gut health and help with blood glucose levels. Pistachios may also help lower blood pressure. And another study found pistachios may improve eye health. Pretty impressive!

Here is your short gluten-free shopping list: unshelled pistachios, honey, coconut oil, a lime for juicing and zesting, curry powder and sea salt. The ingredients are melted together in a saucepot, poured over the pistachios and baked about 25 minutes. The smell from the oven as they bake is intoxicating. It's kind of hard to wait for them to cool down before digging in.

Ingredients
- 12 ounces (1 bag) pistachios in the shell
- 1 tablespoon honey
- 1 tablespoon coconut oil
- 1 lime, zested and juiced (about 1 tablespoon of juice)
- 1 1/2 tablespoons curry powder
- 1/2 teaspoon sea salt (or to taste)
Here's how to make it:
- Put the honey, coconut oil, lime zest, lime juice, curry powder and salt into a small saucepot. Stir over low heat until the ingredients melt together. (You could add some ground cayenne or crushed red pepper flakes for some heat.)
- Put the pistachios into a bowl. Pour the curry mixture over the nuts.
- Stir well to coat. (You could use shelled pistachios, but I would reduce the baking time.)
- Pour the nuts onto a baking sheet in a single layer. (You can line the baking sheet with parchment paper or aluminum foil for easier cleanup.) Bake in a preheated 300-degree F oven for about 25 minutes, stirring once.
- Let the pistachios cool before enjoying. Store in an airtight container or mason jar.
