When my kids and husband start hinting about me baking a batch of chocolate chip cookies, sometimes I want to hide. After a long day at the office, who wants to measure flour, baking soda, baking powder and all those other ingredients in homemade chocolate chip cookies? Not me! When I found this shortcut recipe for chocolate chip cookies, I stopped hiding.
This shortcut chocolate chip cookie recipe starts with a box cake mix, which has all those baking ingredients in it already. These moist cookies are quick, easy and satisfy that sweet snack attack. Here is your short shopping list for this cookie recipe: a box of yellow cake mix, vegetable oil, eggs and chocolate chips (whatever variety you like). The cookies bake up in about 10 minutes.
These chocolate chip cookies are the perfect sweet snack (kid and husband approved!). Sometimes I'll serve the cake mix cookies as dessert after dinner with coffee or a glass of cold milk.

Ingredients
- 15 ounces (1 box) yellow cake mix
- 1/2 cup vegetable oil
- 2 eggs
- 1 cup chocolate chips
Here's how to make it:
- Stir together the cake mix, oil and eggs in a mixing bowl. (For gluten-free cookies, use a gluten-free cake mix.)
- Fold in the chocolate chips. (You can use semisweet, dark, milk or bittersweet chocolate chips.)
- Drop the dough onto a parchment paper-lined baking sheet. (I get 16 to 20 depending on size.) Bake in a preheated 350-degree F oven for about 10 minutes, or until cookies are set. (Do not over-bake!)
- Remove to a rack to cool before enjoying. Store the cookies in an airtight container to keep them fresh.
