Recipe Notes
- Be sure to cut the carrots on a small dice so they cook quickly.
- The peanuts are optional, but do add a nice crunch to the turkey bowl. You could use cashews or almonds instead.
- If you can't find ponzu sauce, substitute soy sauce, tamari, hoisin sauce, teriyaki sauce or tonkatsu sauce. You could also make homemade ponzu sauce.
- If you want to make this recipe gluten-free, use gluten-free sauces.
- Bottled sweet chili sauce works great, but you could make homemade sweet chili sauce. It's easy!
- This recipe serves two, but can easily be doubled for four servings.
- I served mine over basmati rice, but you could also serve it over jasmine rice, white rice, brown rice or even quinoa.
Here's how to make it:
- Stir together the mayonnaise and sriracha, to taste, in a small bowl. Set side.
- Add a drizzle of cooking oil in a skillet. Add the carrots and cook until softened, about 3 minutes.
- Add the ground turkey and chopped green onions. Cook until turkey is browned and cooked through, about 5 minutes. Season with salt and black pepper.
- Add the sweet chili sauce, ponzu sauce and sweet dark soy sauce. Squeeze in the juice of 1 lime wedge.
- Stir and cook for about 2 minutes.
- Put cooked rice into the bottom of a bowl. Top with the ground turkey mixture. Garnish with the chopped peanuts and green onions. Drizzle with the spicy mayo. Serve with the remaining lime wedges.
