To make these thin vanilla crepe-like pancakes you will need just a few ingredients from the pantry and fridge. Here is what you need to grab to make this recipe: flour, sugar, baking powder, salt, an egg, milk, butter and vanilla extract. The dry ingredients are whisked together, then the wet are stirred together. Combine the two and have your pan hot and ready to cook the pancakes in.

- Have your pan hot and ready so you can cook the batter immediately. If it sits, it'll thicken up.
- You could omit the vanilla extract, if desired.
- Instead of vanilla extract, try almond extract (though reduce the amount as it is a strong flavor) or lemon extract.
Here's how to make it:
- While you are making the batter, heat a large skillet over high heat. Combine the flour, sugar, baking powder and salt in a bowl. Whisk to combine.
- In another bowl stir together the egg, milk, melted butter and vanilla.
- Combine the wet and dry ingredients.
- Butter the pan. Slowly pour the batter into the pan (it is thin so it will spread fast). Cook until bubbles start to show.
- Flip the pancakes over and cook a few seconds more or until cooked through (this will happen fast).
