Here's what you need in order to make this moist and juicy chicken dinner: chicken thighs, honey, soy sauce, Dijon mustard, onion, garlic and red wine vinegar. You whisk together the sauce then spread it over the chicken in a skillet. Then you just simmer it until it's done, so easy!
This gluten-free chicken recipe is so simple, and quick enough to make for dinner any night of the week. I served this flavorful, budget-friendly chicken over turmeric rice (to soak up the yummy sauce) with a side of sauteed vegetables, but you can serve it with any of your favorite side dishes.

- 1 teaspoon red wine vinegar

Here's how to make it:
- To a large skillet over medium heat, add the olive oil, onions and garlic. Stir to combine.
- Add the chicken to the skillet. Season with salt and pepper, if desired.
- Simmer over medium heat until chicken starts to cook through, about 5 minutes.
- To a mixing bowl, add the honey, soy sauce, Dijon mustard and red wine vinegar. Whisk to combine. Pour the sauce into the skillet.
- Stir to combine, ensuring the chicken is covered in the sauce.
- Cook the chicken for about 10 more minutes, or until desired doneness. Chicken is done when it reaches 165 degrees F on a food thermometer. Remove from heat and serve over rice and/or with your favorite side dishes.
