- 2 pork tenderloins (about 1 1/2 pounds total)
- 2 tablespoons olive oil
- 1/4 cup chopped onion
- 1/2 cup balsamic vinegar
- 1 1/2 tablespoons packed light brown sugar
- 2 cloves garlic, minced or pressed
- 2 teaspoons freshly chopped rosemary (optional)

- Slice the pork for delicious pork sandwiches.
Here's how to make it:
- Season the tenderloins all over with salt and pepper. Heat the olive oil in a skillet. Add the pork and cook until well browned on all sides. Put the meat into a large casserole dish.
- In a bowl, whisk together the balsamic vinegar, brown sugar, garlic, onion and rosemary. Pour the mixture into the skillet. Cook, stirring, about 2 to 3 minutes or until reduced by half and onion has softened. Pour the glaze over the pork.
- Bake the pork in a preheated 375-degree F oven for about 20 to 30 minutes, basting occasionally. Pork is done when it reaches 145 degrees F. Remove the pork and let it rest for 5 minutes before slicing. Serve with accumulated pan drippings.
