Ingredients

  • 4 large russet potatoes, grated and dried well with a kitchen towel or paper towels
  • 1 onion, grated
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 2 - 3 tablespoons olive oil 
  • fresh chives, for garnish

  • You could put fresh minced chives into the potatoes before frying for added flavor. Don't have chives? Use chopped green onion tops.
  • Be sure to put the fried potato cakes on a paper towel to absorb any excess oil before serving.
  • Store any leftovers in an airtight container in the fridge for up to five days.

Here's how to make it: 

  1. Put the grated potato, grated onion, eggs and flour into a mixing bowl. Season with salt and black pepper. Mix well. 
  2. Heat the olive oil in a large nonstick skillet over medium heat. Add spoonfuls of the potato mixture and spread to desired thickness. Cook for about 3 minutes on each side, or until crispy and golden brown.
  3. Remove to a paper towel. Season with a little more salt, if desired. Garnish with fresh chives and serve immediately.
