French onion soup is so good, but I wanted to add more protein and vegetables. That's why this gluten-free soup recipe is not so much a French onion soup recipe as it is a chicken and vegetable soup recipe with French onion flavor.
This shortcut French onion chicken soup recipe is so delicious, you'll never believe how simple it is to make. Here's what you need to gather to make this savory soup: olive oil, onions, garlic, potatoes, carrots, celery, chicken broth, cooked chicken, a can of green beans, a packet of French onion soup mix, dinner rolls and Swiss cheese slices. The cooked chicken and French onion soup mix packet are the ingredients that make this a shortcut recipe. The toasted Swiss cheese rolls add the finishing touch to this delicious dinner recipe, but they are optional.

Ingredients
- 2 tablespoons extra virgin olive oil
- 2 teaspoons minced garlic
- 3/4 cup onion, diced
- 8 ounces carrots, diced
- 2 medium potatoes, peeled and diced
- 1 bunch celery, diced
- 2 boxes (32 ounces each) low-sodium chicken broth
- 1 pound cooked chicken, diced
- 1 can (14.5 ounces) green beans
- 1 packet (1 ounce) low-sodium French onion soup mix
- dinner rolls and Swiss cheese slices, optional

Recipe Notes
- Feel free to swap in or add your favorite vegetables to this soup.
- You can cook your own chicken or shred a rotisserie chicken, as I did.
- I used low-sodium chicken broth to reduce sodium.
- I used a packet of low-sodium onion soup mix, but you could make your own French onion flavor, as Chef Gigi does.
- You can add a slice of Swiss cheese on top of the soup for extra Swiss flavor.
- The toasted Swiss cheese rolls are so easy to make and a delicious addition to this recipe, but they are optional.
- Store leftover soup in an airtight container in the refrigerator. Reheat in the microwave or on the stovetop in a saucepot.
- This soup freezes well – you may want to have some in reserve for a rainy (or snowy) day!
Here's how to make it:
- To a large soup pot over medium heat, add the olive oil, garlic and onions. Stir to combine. Add the carrots, potatoes and celery and sauté until tender but firm, about 5 minutes. Season with salt and pepper, if desired.
- Add the chicken broth, chicken, green beans and onion soup mix to the soup pot. Stir to combine.
- Bring to a gentle simmer and cook about 10 minutes or until heated through.
- While soup is cooking, prepare the Swiss cheese rolls: Slice a dinner roll in half. Place half rolls into a baking pan. Layer 1 to 2 slices of Swiss cheese onto each half roll. Bake at 350 degrees F for about 10 minutes, or until cheese is melted and rolls are crispy.
- Serve soup with toasted cheese rolls and/or with a slice of Swiss cheese on top, if desired.
