- 1/4 teaspoon ground mustard
- 1/2 cup brown sugar (dark or light)
- 1 onion, chopped
- 3 Medjool dates, chopped
- 2 cups diced pumpkin

Here's how to make it:
- Combine 1/4 cup of the vinegar, the cornstarch, curry powder, nutmeg, cinnamon, ginger, black pepper and ground mustard in a small bowl until smooth.
- In a saucepan, heat the remaining 1 cup of vinegar and brown sugar. Stir to dissolve the sugar then add the pumpkin, dates and onion. Gently simmer until soft, about 20 minutes.
- Whisk in the cornstarch mixture and cook until the chutney thickens. Pour into clean jars.
