There are only six ingredients in this simple low-sodium, budget-friendly potato salad recipe: red or Yukon gold potatoes, red wine vinegar (Granny's secret weapon), fresh parsley, green onions, mayonnaise and garlic salt. After the potatoes are cooked and cut into pieces, they are drizzled with the red wine vinegar and allowed to hang out for about five minutes. Stir in the parsley, green onions, mayonnaise and garlic salt, and this salad is ready to be eaten immediately or popped into the refrigerator.

  • 3 pounds red potatoes or Yukon gold potatoes
  • 4 tablespoons red wine vinegar
  • 1/4 cup chopped flat-leaf parsley
  • 1/2 cup chopped green onions
  • 3/4 - 1 cup mayonnaise
  • 1 teaspoon garlic salt

Here's how to make it: 

  1. Cook the potatoes in boiling salted water until tender, about 20 minutes. Drain well and let them cool slightly. Peel, if desired, and cut into pieces. Put into a large bowl.
  2. Sprinkle the potatoes with the vinegar and let them sit for about 5 minutes. 
  3. Add the parsley, green onions, mayonnaise and garlic salt. Season with salt and pepper, to taste. Mix well. Serve immediately or refrigerate until ready to serve.
