- 2 tablespoons olive oil
- 1/2 cup whiskey
- 1/4 cup brown sugar

Here's how to make it:
- Put the carrots into a baking dish. Drizzle with the olive oil and season with salt and black pepper, if desired. Bake in a preheated 375-degree F oven for about 30 minutes or until carrots are tender.
- While the carrots bake, put the whiskey into a saucepot over medium-high heat. Bring to a simmer and cook until whiskey is reduced by half. Add the sugar and stir until dissolved. Cook, stirring, about 2 minutes. Reduce the heat and add the butter, orange juice the thyme. Season with salt and pepper, if desired.
- Pour the glaze over the carrots and toss to coat. Serve.
