Crispy Smoky Curry Oven-Fried Chicken Thighs Recipe Is So Juicy by Donna John

Crispy Smoky Curry Oven-Fried Chicken Thighs Recipe Is So Juicy

Curry is my new favorite seasoning, and crispy oven-baked chicken is one of my favorite dinners. I combined those two favorites into one – and it was another winner winner chicken dinner!

These juicy bone-in chicken thighs are coated in flour, curry powder and smoked paprika before being baked until golden and crispy. Yes, you only need five ingredients to make this chicken dinner for your family. Here is your shopping list: bone-in chicken thighs, flour, curry powder, smoked paprika and nonstick cooking spray. The cooking oil spray (I used olive oil cooking spray) moistens the flour and helps create the crispy golden skin.

Serve these crunchy Middle Eastern-inspired chicken thighs for dinner with your favorite side dishes. I served mine with cafeteria-style eggplant casserole and fresh kale straight from the farmers market.

Recipe Notes

  • Ovens vary so you can check the doneness of the chicken with a meat thermometer. The chicken is done at 165 degrees F internal temperature.
  • I oiled my baking dish with olive oil.
  • I used my Le Creuset 13x9-inch dish, but any baking dish will work. Cast iron would be a great choice.

Here's how to make it:

  1. Put the flour, curry powder and smoked paprika onto a plate or into a shallow bowl.
  2. Season the chicken with salt and pepper.
  3. Dredge in the seasoned flour and put into an oiled baking dish. Spray the top of the chicken with cooking oil spray.
  4. Bake in a preheated 375-degree F oven for about 40 minutes, or until chicken is cooked through and skin is golden and crispy.
