Texas Cattle Drive Casserole Recipe Is What to Wrangle Up for Dinner

Casseroles are always fan favorites on 30Seconds, and an easy – usually inexpensive – option to feed the family. This Texas cattle drive casserole recipe is similar to the John Wayne casserole, but with a few ingredient switches. (I bet The Duke would love this casserole, too.)

This hearty budget-friendly casserole recipe has Mexican-flavored ground beef, a biscuit-like crust, a creamy layer and a cheesy top. The only prep is chopping an onion and grating the cheese (unless you use pre-shredded cheese). Here is what you'll need to make this easy casserole: ground beef, onion, dry taco seasoning, a can of chopped green chiles, sour cream, mayonnaise, cheese, biscuit baking mix and water.

The ground beef is cooked up in a skillet along with the onion, chopped green chiles and taco seasoning. The sour cream, mayonnaise and half of the cheese makes the creamy layer. The biscuit baking mix is combined with the water to create the crust. The layers are combined, topped with more cheese and baked until bubbly and golden.

Serve this Texas-sized casserole for dinner with your favorite side dishes. I served mine with broccoli and a cucumber salad.

  • Use whatever type of cheese you like. I used cheddar cheese and pepper-jack, but any Mexican blend cheese would work well.
  • Try this recipe with ground turkey instead of ground beef.
  • For a lower sodium dish, use low-sodium taco seasoning.
  • I didn't add any extra salt to the dish, but did use black pepper.
  • Store any leftovers in an airtight container in the fridge. You can also freeze it for later. I frozen half for another dinner. 

Here's how to make it: 

  1. Put the ground beef, onion, taco seasoning and chopped green chiles into a skillet.
  2. Cook, stirring often, until meat is cooked through and onions are soft. Turn off the heat.
  3. In a mixing bowl, stir together the sour cream, mayonnaise and half of the cheese. Season with black pepper, if desired.
  4. In another bowl, stir together the biscuit baking mix and water until a dough forms.
  5. Press the dough into a greased 13x9-inch baking dish.
  6. Top with the ground beef mixture.
  7. Spread the sour cream mixture over the top.
  8. Sprinkle with the remaining cheese.
  9. Bake in a preheated 350-degree F oven for 30 minutes.
  10. Let the casserole sit for at least 5 minutes before slicing and serving.
