  • You can use milk chocolate chips, semi-sweet or dark chocolate chips in this recipe, depending on your preference.

  • Store the cookies in an airtight container on the counter.

Here's how to make it: 

  1. With an electric mixer, cream the butter and sugar together until light and fluffy, about 3 minutes. Add the eggs and vanilla. Mix well. 
  2. In another bowl, combine the flour, cocoa powder, baking soda and salt. Slowly add the mixture to the wet ingredients until just combined. 
  3. Make rounded tablespoons full of dough and place on parchment paper-covered baking sheets. Bake in a preheated 350-degree F oven for about 7 to 8 minutes, or until the tops begin to crack. 
  4. Remove the cookies from the oven and immediately put a marshmallow on top of each. Put the trays back into the oven and bake 2 more minutes. Remove the cookies and let cool completely. 
  5. Melt the chocolate chips in the microwave until smooth, stirring every 30 seconds. Spoon the chocolate over the cooled cookies.

Pinwheels were my grandpa's favorite cookie! He shared everything with us grandkids, but he would hide these cookies from us! lol They were usually on top of the refrigerator where we couldn't reach them. Wish he was around still and I would make these for him. :-)
