Fresh & Healthy Red Bell Pepper Salsa Recipe: Get Your Vitamin C & A On

Fresh homemade salsa is a healthy food that's so easy to prepare. Most salsa recipes call for chopped tomato, but this one uses healthy red bell peppers instead. This not only makes the salsa healthier, but crunchier. Did you know that a half cup of raw red bell pepper provides you with 47 percent the daily requirements for vitamin A and 159 percent for vitamin C? Yes, 159 percent! Now you know why I love this easy red bell pepper salsa recipe.

The homemade salsa is made with red bell pepper, chopped fresh cilantro, chopped red onion, jalapeno peppers, fresh lime juice and minced garlic cloves. The ingredients are mixed together and seasoned with salt and black pepper. Let the salsa sit at room temperature for a while so the flavors can blend. Sometimes I'll add an orange or yellow bell pepper in, too, for extra color.

Serve this healthy salsa with tortilla chips, as a topping for grilled fish or chicken, as a fresh topping on Mexican pizza or a burger, or as a side dish with your favorite protein. I like to make Mexican chorizo pizzas on tortillas and pile this red pepper salsa on top before serving. I've even stirred some into chicken salad. Delicious!

Ingredients

  • 1 small red bell pepper, chopped  
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped red onion or 3 chopped green onions
  • 2 jalapenos, seeded and minced
  • 2 tablespoons lime juice
  • 1 - 2 cloves garlic, minced
  • 1 small yellow or orange red pepper, chopped (optional)

Here's how to make it: 

  1. Combine all the ingredients in a bowl. Season with salt and pepper.
  2. Stir and let the salsa sit at room temperature at least 1 hour before serving.
