Cherry Tomatoes: 5 Yummy Ways They Give You a Nutritional Boost!

We had a bounty of cherry tomatoes in our garden this year! Did you know...

  • They're rich in the antioxidant lycopene, which has been shown to reduce the risk of prostate cancer and possibly breast cancer.
  • They contain flavonoids, potassium and vitamins A and C.
  • They are rich in dietary fiber, which helps you feel fuller while taking in fewer calories.

The kids harvest them and eat them plain, or we add them to soup and chili, or salad and shish kebab. Saute them in olive oil, garlic, onion and peppers, then top your favorite pasta. Or slice them in half and stuff them with guacamole, feta or goat cheese!

Caprese salad is my latest food craving. I love that it is so easy and healthy. (Fortunately, I love tomatoes so I don't require a large portion of fresh mozzarella.)
