Ingredients

Here's how to make it: 

  1. Combine the oats, baking powder, salt and pumpkin pie spice in a bowl. 
  2. Combine the pumpkin puree, milk, egg whites, vanilla, maple syrup and nuts in another bowl.
  3. Add the dry ingredients to the wet ingredients. Mix well. Pour into an 8x8-inch baking pan
  4. Bake in a preheated 375-degree F oven for about 25 to 30 minutes.

This sounded so good that I decided to make it today, even without having pumpkin! My 13x9 pan is getting a workout with all these great recipes. I used this recipe but pivoted to apple cinnamon instead of pumpkin. I also added additional oats and almond milk to ensure plenty of leftovers. Wow! So yummy, and a great new way to eat oatmeal.
