To make this nutritious energy snack recipe you will need shredded carrots, chopped pecans, chopped dates, an egg white, cinnamon, honey, coconut flour (or regular flour) and ground flaxseed. These tasty treats are ready in only about 25 minutes!

  • The amount of energy balls depends on the size of the balls you make.
  • Not a fan of pecans? Try almonds, walnuts or cashews instead. 
  • Raisins could be substituted for the dates.
  • Maple syrup could be substituted for the honey.
  • If you don't have coconut flour, you can use all-purpose or gluten-free flour.
  • Refrigerate energy balls in an airtight container.

Here's how to make it:

  1. Combine the carrots, dates and pecans in a large mixing bowl. 
  2. In another small bowl, whip the egg white until frothy. Add it to the carrot mixture.
  3. Add the cinnamon, honey, flour and flaxseed. Mix well. 
  4. Form mixture into balls and place on a parchment paper-lined cookie sheet. 
  5. Bake in a preheated 350-degree F oven for about 12 to 14 minutes. Allow to cool a few moments before serving.
