20-Minute Mashed Cinnamon Honey Carrots Recipe Is a Fresh & Fun Side Dish Vegetables Side Dishes

Ingredients

  • 2 pounds carrots, peeled, if desired and cut into 1-inch pieces
  • 3 tablespoons butter
  • 2 tablespoons honey
  • 2 teaspoons lemon juice
  • 1/2 - 1 teaspoon kosher salt (start with 1/2 teaspoon first and increase as needed)
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon cinnamon

Here's how to make it:

  1. Boil the carrots for approximately 15 minutes or until soft. Strain.
  2. Place carrots into a large mixing bowl and roughly mash with a potato masher.
  3. Add butter, honey and lemon juice. Mash carrots once more. (If you want the carrots to be super smooth, you'll need to use a food processor).
  4. Season with salt, pepper and cinnamon. Mix to combine. Serve immediately.

This sounds amazing, except that I oven roast pretty much all of my veggies. I wonder how I could adapt this to still use honey and cinnamon (without burning the honey)?

You could probably roast your carrots how you normally would, and then when they are almost done (with maybe 5 minuted to go) drizzle the honey and sprinkle the cinnamon on. I haven’t tried it this way, so I don’t know if it’ll work, but if you try it - do let me know how it turns out!
