Moist Carrot Cake Energy Balls Recipe Will Put Pep in Your Step Snacks

Pop one of these moist carrot, date and pecan energy balls into your mouth and you're in for an energizing snackThey're super simple to make, too. Keep some on hand for when you need a quick pick-me-up.

Not a fan of pecans? Try almonds, walnuts or cashews instead. Raisins could be substituted for the dates.

Ingredients

Here's how to make it:

  1. Combine the carrots, dates and pecans in a bowl. 
  2. In another small bowl, whip the egg white until frothy. Add it to the carrot mixture.
  3. Add the cinnamon, honey, flour and flaxseed. Mix well. 
  4. Form mixture into balls and place on a parchment paper-lined cookie sheet. 
  5. Bake in a preheated 350-degree F oven for about 12 to 14 minutes.
