Oven-fried Chicken Recipe: This Panko Oven-fried Chicken Recipe Is So Good You'll Want to Hide a Piece for Tomorrow

My grandma made the best fried chicken. You know, the kind fried in lard that tastes like heaven? I could never master her techniques, but found a super-crunchy, oven-baked panko chicken recipe my family loves. And yes, I've hidden a piece for the next day.

Prep Time: 10 minutes
Cook Time: 40 minutes

You'll need:

Here's how to make it:

Put the butter in a cast iron skillet or oven-proof skillet and pop it into a preheated 425-degree F oven to melt while you get the batter station ready. Put the eggs and water in one bowl and panko and remaining ingredients except olive oil in another bowl.

Dip the chicken in the egg wash and then roll in the crumb mixture, pressing so it sticks to the skin. Remove the pan from the oven and place the breaded chicken into it. Drizzle with olive oil. Bake for about 30 - 40 minutes, depending on how big your chicken pieces are, turning once.

Note: Italian Seasoning could be used in place of the dried basil and oregano.

I can almost smell this chicken, wow. I want a piece right now, Donna John ! Love the photos. I think I can actually do this, thanks!

It's so crunchy and has lots of flavor. I like it done with legs and thighs, and usually do a combination because I can't decide.

Breast for me, but the coating sounds delicious!! Wonder how it would do in an AIR FRYER ;)
Donna John
AIR FRYER???? lol We need to meet up and make that kitchen appliance switch. :-)

Need to make this again soon. So good!

My stomach has been growling since seeing this recipe again. I've got some legs in the freezer, so think it may have to happen. Not only is this chicken super crispy, it's very flavorful because of the seasonings and parmesan. If you try it, be sure to leave a note here (and snap a photo!).

I think this would be a great recipe for cod as well. I did something similar with coconut but WAY over seasoned it. Thank you for this!
Donna John
Yeah! Great idea. I love cod. I'm making this chicken tonight.
