Cheesy Buffalo Chicken Spinach Pinwheels Recipe Makes St. Patrick's Day Even More Festive by Cheryl Leahy


I love to throw parties, but making appetizers for a crowd can be incredibly time consuming. That's why on St. Patrick's Day, I like to make these easy spinach buffalo chicken pinwheels. They make St. Patrick's Day even more festive! 

This cheesy chicken pinwheels recipe takes very little time to make, but this appetizer recipe is sure to be a crowd-pleaser for kids and adults alike. It's a great alternative to sandwiches.

Cooked shredded chicken, blue cheese and buffalo sauce are mixed into cream cheese. You spread the mixture on spinach tortillas, roll them up then slice them into pinwheels. So easy and delicious, and the perfect finger food for entertaining (or just for family fun).

These simple, flavorful pinwheels make an easy appetizer or festive snack, or a light lunch anytime. Don't save them just for St. Patrick's Day!

Ingredients

  • 4 ounces cream cheese, softened
  • 4 ounces blue cheese crumbles
  • 6 ounces cooked shredded chicken
  • 2 teaspoons buffalo sauce (or to taste)
  • 3 large spinach tortillas

  • You could use regular flour tortillas, if you prefer.
  • You could add some shredded lettuce or diced tomatoes, if desired. 
  • You can use more or less buffalo sauce, depending on how much spice you like.
  • Store leftovers in an airtight container in the refrigerator.

Here's how you make it:

  1. In a large mixing bowl, combine the cream cheese, blue cheese crumbles, shredded chicken and buffalo sauce. Stir to blend. 
  2. Spread the mixture onto the spinach tortillas. 
  3. Roll up the tortillas and cut them into slices, creating pinwheels. Serve.
