I'm a fan of recipes with few ingredients that can be made quickly without fuss. I love avocados and eat them frequently to fill up on healthy fats that keep inflammation and heart disease at bay. Try this simple, satisfying, nontraditional breakfast to get you out of your breakfast rut!
- 1 medium avocado
- 2 eggs
- salt and pepper
- spices to taste
Here's how to make it:
- Cut avocado in half and scoop out half of the inside to make a hole for the egg.
- Crack whole egg into the avocado.
- Bake at 425 degrees F for 15 to 18 minutes.
- Sprinkle with salt, pepper and desired spices.
For a special treat, add bacon!
