Ham & Cheese Lover's Egg Scramble Recipe (6 Ingredients, 10 Minutes) by Elisa Schmitz

Ham & Cheese Lover's Egg Scramble Recipe (6 Ingredients, 10 Minutes)

Ham and cheese go together like peanut butter and jelly or peas and carrots. But, if you ask me, the ham and cheese flavor combination kicks those other two to the curb. Yes, I really love ham and cheese!

If you're a ham and cheese lover like me, then you will love this tasty ham and cheddar egg scramble recipe. Savory chunks of ham are nestled into fluffy, flavorful eggs then crowned with a layer of cheddar cheese that will make you go YUM!

This gluten-free egg dish is extra tasty – thanks to the addition of garlic powder and oregano. Plus, the eggs are cooked in extra virgin olive oil, which is part of a heart-healthy Mediterranean diet that promotes health and longevity.

Here are the six ingredients you need to make these cheesy scrambled eggs: extra virgin olive oil, eggs, ham, shredded cheddar cheese, garlic powder and oregano. This hearty breakfast comes together in only about 10 minutes, making it an easy way to power up your day.

I served these eggs for breakfast on a toasted English muffin with a side of my everything but the bagel roasted potatoes and it was super satisfying. It would make a great lunch or dinner, too!

Recipe Notes

  • Instead of oregano, you can try different seasoning blends, such as Mediterranean seasoning or Italian herb seasoning.
  • If making an egg sandwich, you can spread a layer of cream cheese on your bagel, English muffin or toast before placing the eggs.
  • Store leftover eggs in an airtight container in the refrigerator.

Here's how to make it:

  1. Crack the eggs into a large mixing bowl. Add the oregano and garlic powder, and season with salt and pepper, if desired. Whisk until blended.
  2. Add the olive oil to a nonstick skillet over medium heat. Add the ham to the skillet and sauté until heated through, about 2 minutes.
  3. Pour in the egg mixture. Using a wooden spoon or spatula, scramble the eggs until they are done to your preference, about 3 minutes. Turn off the heat.
  4. Spread the shredded cheddar cheese over the eggs then cover the pan. Allow to rest until cheese has melted, about 2 minutes.
  5. Serve eggs on their own, or on top of a bagel, English muffin or toast as an egg sandwich.

This is one of my favorite things to do with leftover ham, though you don't need leftover ham in order to make it. So easy and delicious!
