Creamy 5-Minute Pumpkin Cheesecake Mousse Recipe With a Protein-Rich Secret Ingredient by Elisa Schmitz

Creamy 5-Minute Pumpkin Cheesecake Mousse Recipe With a Protein-Rich Secret Ingredient

This time of year, many of us crave pumpkin – and we want it right now. Instead of running to your local coffee shop for a pumpkin spice latte or a slice of pumpkin loaf – neither of which are very nutritious – I highly recommend making this super simple and delicious pumpkin cheesecake mousse recipe. This creamy pumpkin mousse comes together in only five minutes, is low-carb and has a protein-rich secret ingredient to help boost nutrition.

This five-minute mousse recipe is delicious and nutritious thanks to the health benefits of pumpkin, along with the secret ingredient: ricotta cheese. The health benefits of ricotta cheese include that it is a good source of protein, calcium and vitamins, and it may help reduce inflammation. Its creaminess makes it ideal for use in all kinds of recipes, including desserts like this one.

This creamy pumpkin mousse is incredibly simple to make. You need only seven ingredients: pumpkin puree, low-fat ricotta cheese, maple syrup, vanilla extract, cinnamon, salt and nutmeg. The pumpkin pie spice, chopped nuts and whipped cream or Greek yogurt are optional toppings.

This sweet, low-sodium treat makes an energizing snack that will satisfy your pumpkin spice cravings easily and elegantly. You can serve this light yet decadent gluten-free treat for a special occasion, or literally any night of the week – it's that easy!

Recipe Notes

  • You can add a bit more maple syrup if you'd like your mousse to be sweeter.
  • You can add a dash of pumpkin pie spice to the mousse itself if you like more pumpkin spice flavor.
  • Serve immediately or refrigerate for up to an hour to allow the mousse to set more firmly.
  • Serve this festive dessert in pretty little bowls or even wine glasses for an elevated presentation.
  • Store any leftovers in an airtight container in the refrigerator.

Here's how you make it:

  1. In a mixing bowl, combine the pumpkin, ricotta cheese, maple syrup, vanilla, cinnamon, nutmeg and salt.
  2. Stir or whisk vigorously to combine, or use an electric mixer to whip until fluffy.
  3. Serve immediately or, if you prefer a firmer mousse, allow to set in the refrigerator for up to an hour.
  4. Serve in pretty dishes or glasses. Top with whipped cream or low-fat Greek yogurt, pumpkin pie spice and/or chopped walnuts or pecans, if desired.
