Strawberry Skillet Cake Recipe: This One-Bowl Cake Recipe Tastes Like Summer

Spring and summer are the seasons for fresh strawberries! There's nothing like biting into a sweet, juicy, fresh-picked strawberry – unless the berry is nestled in a skillet cake. If you're a strawberry lover, you need to add this strawberry skillet cake recipe to your dessert collection.

Grab your 9-inch cast iron skillet and let's bake a skillet cake! You'll need butter, granulated sugar, eggs, vanilla extract, all-purpose flour, baking powder, a pinch of salt, sour cream and fresh strawberries for this cake recipe. All the ingredients are mixed together in one bowl (we love one-bowl recipes!) and then spread into a buttered cast iron skillet. Bake for about 40 minutes, let the cake cool and get ready to sink your teeth into summer.

Serve this easy strawberry skillet cake for dessert or a sweet snack. If you don't have fresh strawberries, try this cake with blackberries, blueberries or blackberries.

Ingredients

  • 1/2 cup (1 stick) butter, softened
  • 1 cup plus 2 tablespoons granulated sugar (divided)
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 1 1/3 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • large pinch of salt
  • 1/2 cup sour cream
  • 1 pound (16 ounces) strawberries, stems removed and cut in half

Here's how to make it: 

  1. Beat the butter and 1 cup of sugar with an electric mixer until light and fluffy, about 2 minutes. Add the eggs, one at a time, and beat well. Beat in the vanilla. 
  2. Add the flour, baking powder and salt. Mix until combined. Add the sour cream and mix until incorporated. 
  3. Fold in the strawberries
  4. Spread the batter into a buttered 9-inch cast iron skillet or ovenproof skillet. Sprinkle with the remaining sugar. 
  5. Bake in a preheated 350-degree F oven for about 40 minutes or until a toothpick comes out clean. Cool before serving.

I would think they would work. But be sure to pat them really dry with a paper towel to remove moisture before adding them. Please let us know how it turns out with cherries!
