The Pioneer Woman's 3-Ingredient Chocolate Cake Recipe Uses an Interesting Ingredient

The Pioneer Woman (aka Ree Drummond) makes a very interesting three-ingredient chocolate cake. The celebrity chef's chocolate cake recipe is made with crisp chocolate cookies (yes, cookies!), baking powder and milk. Sounds interesting, right? I thought so, too.

To make the dense chocolate cake, put crispy chocolate cookies (not cream-filled sandwich cookies or soft cookies) and baking powder into a food processor and pulse until fine crumbs form. With the motor running, slowly pour in milk until a smooth batter is formed. This chocolate batter goes into a square cake pan lined with parchment paper and is baked for about 20 minutes.

Ree uses chocolate bear-shaped cookies when she makes the cake recipe. Just be sure to buy crisp cookies, as soft or cream filled would affect the texture of the cake batter. Serve this three-ingredient chocolate cake for dessert. You can serve it without frosting or try one of these:

Ingredients

  • 4 cups crisp chocolate cookies
  • 1 heaping tablespoon baking powder
  • 2 cups milk

Here's how to make it: 

  1. Put the cookies and baking powder into a food processor or blender and process until they're fine crumbs. Slowly add the milk and blend until it forms a smooth batter.
  2. Line a 8-inch square cake pan with parchment paper so it comes over the sides. Spray with nonstick cooking spray. Pour in the batter. 
  3. Bake in a preheated 350-degree F oven for about 20 to 22 minutes. Remove the cake by pulling up on the parchment paper and let it cool completely. Serve immediately or frost with your favorite cake frosting.
