Yum Cauliflower Fried Rice Recipe: Fast, Low Carb & Fooled the Husband

The other night I made this delicious melt-in-your-mouth roasted pork butt recipe – and had a lot leftover. When I see leftover pork, I automatically think of fried rice. My husband and I are watching our diets and trying to eat a little healthier and reduce carbs, so my rice fried rice turned into cauliflower fried rice. It was so good that he didn't even notice.

The fried rice is quick and easy to make, and has minimal prep. The only prep required is chopping the onion, garlic and green onions. Start the recipe by stir frying onion and garlic until fragrant. Add a bag of frozen riced cauliflower and shake in some soy sauce to give it a brown color, then add the cooked leftover pork and frozen mixed vegetables. Next season the "rice" with oyster sauce, hoisin sauce and more soy sauce. My neighbor back in the day, who was Vietnamese, always added a pinch of sugar to her fried rice, so I keep up that tradition (this is optional). Cook a few more minutes to blend all the flavors and garnish with chopped green onions.

You could use leftover pork, chicken or even beef for this easy cauliflower rice. Serve as a main dish for lunch or dinner, or as a side dish. If you want a vegetarian meal, leave out the meat.

Ingredients

  • 1 small onion, chopped
  • 3 - 4 cloves garlic, minced
  • 1 bag (12 ounces) frozen riced cauliflower
  • 1 - 2 cups cooked shredded or chopped pork, chicken or beef 
  • 1 - 2 cups frozen mixed vegetables
  • low-sodium soy sauce (I used 1 - 2 tablespoons)
  • oyster sauce (I used about 1 tablespoon)
  • hoisin sauce (I used about 1 tablespoon)
  • pinch of sugar (optional)
  • chopped green onions, for garnish

Here's how to make it: 

  1. Heat a little cooking oil in a skillet. Add the onion and cook until crisp-tender. Add the garlic and cook 30 seconds. 
  2. Add the bag of riced cauliflower and a little soy sauce to color it, and cook, stirring about 2 minutes or until any moisture has evaporated. 
  3. Add the chopped pork and frozen vegetables. Cook, stirring, about 2 minutes. 
  4. Add soy sauce, oyster sauce and hoisin sauce, to taste. Add a pinch of sugar, if using, and season well with black pepper. Cook, stirring often, about 5 minutes. Taste and adjust seasonings. Garnish with chopped green onions.
