6-Ingredient Fluffy Baked German Pancake Recipe Will Impress

You don't need a lot of ingredients to impress your family with this beautiful German pancake recipe. Grab your eggs, milk, flour, salt, vanilla extract and butter and you'll have all you need. Of course you can top your beautiful dish with fruit and some powdered sugar or syrup if you'd like.

The eggs, milk, flour, salt and vanilla are pureed in a blender until smooth. The next step in the preparation is very important: let the batter sit for about 15 to 20 minutes so it comes to room temperature. This helps the pancake rise when it is baked in the oven. Melt the butter in an ovenproof skillet then pour in the room temperature pancake batter. Bake for about 22 minutes or until puffy and golden brown. Sprinkle with powdered sugar and it is ready to be served.

Serve this fluffy German baked pancake with syrup or honey and fresh fruit. Strawberries, blueberries, banana, kiwi, pear, apple, raspberries, blackberries and fresh sliced peaches would all be delicious. You could even add a dollop of whipped cream and some chopped nuts for crunch. This dutch baby-style pancake is perfect for breakfast, brunch or even a dessert.

Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 cup all-purpose flour
  • dash salt 
  • 1 teaspoon vanilla extract
  • 5 tablespoons butter

Here's how to make it:

  1. Put the eggs, milk, flour, salt and vanilla in a blender. Cover and process until smooth. Let the batter sit on the counter or stovetop for 15 to 20 minutes so it comes to room temperature. This is an important step as it is what is going to help the pancake get the best rise.
  2. After 15 minutes preheat oven to 425 degrees F. While the oven preheats, put the butter into your 13x9-inch baking dish or large cast iron skillet and place in oven, just until melted.
  3. Pour batter into baking dish, over melted butter. Bake for 22 to 27 minutes or until edges are golden brown and puffy. Sprinkle generously with powdered sugar, syrup or fruit.
