Cut carrots are roasted in the oven until tender. While the gluten-free carrots bake, make a simple, delicious glaze on the stovetop with whiskey, brown sugar, butter, orange juice and fresh thyme. When the low-calorie, low-sodium carrots are tender, pour the tasty glaze into the casserole dish and toss to coat. Garnish with more fresh thyme to make it pretty!

You could use any herb for this baked carrots recipe. Fresh parsley, rosemary, oregano, chives (or a combination) add so much freshness to the dish. If you prefer cooking with baby carrots, no problem! Prefer bourbon over whiskey? Make the simple switch.

  • You can substitute your favorite fresh or dried herbs, such as parsley, rosemary, chives or oregano.

Here's how to make it: 

  1. Put the carrots into a baking dish. Drizzle with the olive oil and season with salt and black pepper, if desired. Bake in a preheated 375-degree F oven for about 30 minutes or until carrots are tender. 
  2. While the carrots bake, put the whiskey into a saucepot over medium-high heat. Bring to a simmer and cook until whiskey is reduced by half. Add the sugar and stir until dissolved. Cook, stirring, about 2 minutes. Reduce the heat and add the butter, orange juice the thyme. Season with salt and pepper, if desired. 
  3. Pour the glaze over the carrots and toss to coat. Serve.
