Ham, Cheese, Quinoa & Spinach Crustless Quiche Recipe: You Won't Regret Making It

Quiche has gotten a bad wrap! Lots of men eat quiche for breakfast, brunch, lunch and dinner. Really. Everyone seems to enjoy a good quiche. Quiches are super simple to make, too, and can be a complete meal. 

This easy crustless quiche recipe has a plethora of healthy, wholesome ingredients. The quiche is made with onion, mushrooms, ham, fresh spinach, quinoa, shredded cheese, herbes de provence, sour cream, garlic, eggs, Dijon mustard and grated Parmesan cheese. The onions are caramelized in a skillet first, then the mushrooms, ham and spinach are added. The mixture cools slightly while you mix together the cooked quinoa, cheese, herbes de provence, garlic, sour cream, eggs and Dijon mustard. Combine that hearty filling with the onions, pour it into a pie plate and bake in the oven until the eggs are set. Don't forget to top it with a little grated Parmesan at the end.

You could use kale instead of spinach and cooked bacon or prosciutto instead of the ham. Serve this easy quiche recipe for lunch, brunch or breakfast, or for dinner with a salad.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1/2 cup sliced or chopped mushrooms
  • 1 1/2 cups chopped ham
  • 3 cups finely chopped fresh spinach 
  • 2 cups cooked quinoa, cooled 
  • 1 1/2 cups shredded cheese (Swiss, muenster, gruyere, cheddar, fontina, etc.)
  • 1/2 teaspoon herbes de provence 
  • 2 cloves garlic, minced
  • 4 tablespoons sour cream
  • 8 eggs
  • 2 tablespoons Dijon mustard
  • freshly grated Parmesan cheese, for finishing

Here's how to make it: 

  1. Heat the olive oil in a skillet. Add the onion and cook until it begins to caramelize, about 8 minutes. Add the mushrooms and cook until soft, about 2 minutes. Add the ham and spinach. Cook until the spinach wilts, about 2 minutes. Remove from the heat. 
  2. Mix together the cooked quinoa, eggs, shredded cheese, sour cream, garlic, herbes de provence and Dijon mustard. Season with salt and pepper. Add to the cooled onion and spinach mixture. 
  3. Pour the filling into a greased round casserole dish or deep dish pie plate. Bake in a preheated 350-degree F oven for about 30 minutes or until eggs are set. Top with shredded Parmesan cheese right at the end of baking. Let the quiche rest for about 5 minutes before cutting.
