Juicy Lucy. It's just fun to say, isn't it? But what is a Juicy Lucy burger? Depending on who you talk to, the Juicy Lucy burger was invented in the early 1950s in either the south Minneapolis bar 5-8 Club or Matt's Bar. At Matt's Bar, they spell the sandwich "Jucy Lucy," and if you spell it right, "you're at the wrong place." It's said that Matt's Bar owner Matt Bristol created a burger for a customer made with two patties stuffed with cheese, and when he bit into it, he said, "that's one juicy Lucy."

A Juicy Lucy burger is a cheeseburger with the cheese stuffed between two seasoned beef patties. The burger recipe is simple to make at home. All you need is American cheese slices, ground beef, kosher salt, garlic powder, Worcestershire sauce, freshly ground black pepper, hamburger buns and pickles. That is the basic Juicy Lucy burger. We've taken our version up a notch with the option of adding caramelized onions.

After mixing together all the ground beef ingredients, form patties and top half of them with four squares of American cheese. Top with another patty and pinch the edges to seal. The patties are cooked in a skillet until well browned and cooked through. Put one patty and sliced pickles on toasted buns and dinner or lunch is done. If you're adding the caramelized onions, put desired amount on top of the patty.

Serve these stuffed cheeseburgers with french fries, onion rings, fried okra (OK, it's southern but still good with a Midwest burger) or potato chips for a fun family dinner.

  • You could also grill these burgers outside if weather permits.
  • Not a fan of American cheese? Use your favorite cheese (or cheeses!) instead.
  • Try this recipe with ground turkey instead of beef.
  • A cast iron skillet really helps you develop a crust on the burger patties, but any skillet will work.

Here's how to make it: 

  1. Stack the four cheese slices and cut in half. Then, cut in half again to form four stacks of square cheese. Set aside.
  2. Mix the ground beef, salt, garlic powder, Worcestershire sauce and black pepper together in a mixing bowl until just combined. Divide the meat into eight patties that are about 1 inch bigger than your buns. Top four patties with four pieces of cheese. Top with a second patty and pinch the edges to seal. 
  3. Heat the oil in a large skillet. Add the patties and cook, undisturbed, until golden brown, about 4 minutes. Carefully flip the patties over and cook another 4 minutes or until cooked through. 
  4. Put pickle slices on the bottom of four toasted buns. Top with a patty and caramelized onions, if using. Place the top bun on the top and serve.
