Delicious 20-Minute Mashed Potato Tacos Recipe for Taco Night

My daughter came home from her dad's house and told me about these amazing mashed potato tacos her step-mom made for her. They sounded delicious, so I attempted to recreate the description that my daughter gave me. This mashed potato taco recipe is what I came up with.

The Mexican potato tacos are simple to make and have just a few ingredients: russet potatoes, milk or cream, sour cream, chili powder, ground cumin, shredded cheese and tortillas. Russet potatoes are boiled until tender, drained and mashed. Milk, sour cream, chili powder, ground cumin and cheese are stirred in until the cheese melts. Season liberally with salt and pepper. Spread the mashed potatoes on the inside of corn or flour tortillas, fold up and cook in a hot skillet until they begin to brown and crisp up.

My husband prefers flour tortillas so I made corn and flour tortilla tacos. I also cooked some chorizo for my husband's tacos, because the man has to have meat for dinner. Use whatever cheese you like. Cheddar, Monterey Jack, Chihuahua, muenster, queso asadero, Oaxaca or other Mexican melting cheeses work well. You could also use a Mexican cheese blend.

Serve these potato tacos with a dipping sauce like Amazon sauce, creamy avocado serrano sauce, avocado tomatillo sauce, homemade salsa or chipotle sauce, and your favorite side dishes. I served mine with charro beans and guacamole.

Ingredients

  • 2 medium russet potatoes, peeled and cut into chunks
  • 2 tablespoons milk or heavy cream
  • 1/4 cup sour cream
  • chili powder
  • ground cumin
  • 1/2 cup shredded cheese
  • corn tortillas or flour tortillas

Here's how to make it: 

  1. Boil the potatoes until tender. Drain and mash well. Add the milk, sour cream, shredded cheese and ground cumin and chili powder, to taste. Season with salt and pepper. Mix well.
  2. Spread desired amount of mashed potatoes inside of the tortillas. Fold in half.
  3. Heat a drizzle of oil in a skillet. Add the tacos and cook until golden on each side, about 2 minutes per side.
