Skinny Baked Fish Florentine Recipe: Healthy Food With Flavor

Weight-loss and skinny recipes don't have to mean bland and flavorless! This skinny baked fish florentine recipe is proof of that. With fresh, wholesome, healthy ingredients, this is one fish recipe you don't want to lose.

Chopped green onions, olive oil, garlic, frozen chopped spinach, cherry tomatoes, crushed red pepper flakes and ricotta cheese create the tasty topping for the fish fillets. Pile the florentine topping on the fish and bake in the oven until the fish is cooked through. Now get ready to sit down to a healthy dinner

Salmon is a good choice for this baked fish recipe, but you can use whatever fish you enjoy. Serve this easy skinny fish florentine with a steamed vegetable or salad on the side.

Ingredients

  • 1/2 cup chopped green onions
  • 1 teaspoon extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 package (12 ounces) frozen chopped spinach, thawed, drained and patted dry
  • 1 1/2 cups halved cherry tomatoes
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup part-skim ricotta cheese
  • 4 wild salmon fillets (about 5.5 ounces each), thawed if frozen

Here's how to make it: 

  1. In a medium skillet, cook green onions in nonstick cooking spray until they begin to soften, about 2 minutes. Add garlic and cook 1 minute more.
  2. Add the spinach, tomatoes, crushed red pepper flakes, salt and pepper. Cook, stirring, for 2 more minutes. Remove from heat and let cool for 10 minutes. Stir in the ricotta.
  3. Place the fish fillets skin side down on a lightly sprayed rimmed baking sheet. Top each fillet with 1/4 of the spinach mixture. Bake in a preheated 350-degree F oven for 15 minutes, or until fish is cooked through.
