Creamy Honey Mustard Egg Salad Recipe With a Surprise Ingredient

Egg salad is a quick, protein-rich recipe idea for lunch or a light dinner. It's easy to prepare and can be made in so many different ways. This creamy honey mustard egg salad recipe has some interesting ingredients that all add up to a fantastic version of egg salad.

The easy egg salad recipe is made with hard boiled eggs that have been chopped, mayonnaise, honey mustard, chopped sweet pickles or pickle relish (shortcut), fresh chopped chives or green onion tops and the surprise ingredient: shredded white or yellow cheddar cheese. The cheese adds another layer of richness and creaminess to the egg salad recipe.

If you like Miracle Whip, use it in place of the mayonnaise. But keep in mind that Miracle Whip is sweet, so it will make the finished egg salad on the sweeter side. Substitute your favorite cheese for the cheddar, and you can make the egg salad less sweet by using dill pickles instead of sweet pickles.

Ingredients

  • 8 large hard boiled eggs, peeled and chopped
  • 1/2 cup mayonnaise
  • 2 tablespoons honey mustard
  • 2 tablespoons chopped sweet pickles or pickle relish
  • 1/4 cup shredded white or yellow cheddar cheese
  • 2 tablespoons chopped fresh chives or green onion tops

Here's how to make it: 

  1. Combine all the ingredients in a mixing bowl. Season with salt and pepper.
  2. Stir well to combine. Refrigerate until ready to serve.
