4-Ingredient Cheesy Bacon Ranch Chicken Recipe: A Quick One-Pan Chicken Dinner

This one-pan chicken recipe is quick, easy and cheesy! Yes, I just said that! Make this bacon ranch chicken tonight. Your family will think it's a winner-winner chicken dinner!

The chicken recipe starts by cooking bacon in a skillet until crispy. The chicken breasts are seasoned with salt and black pepper, then cooked until golden and just cooked through in the bacon fat. Sprinkle the chicken with the dry ranch seasoning and top with the crumbled bacon and shredded mozzarella or cheddar cheese. Almost done! Just wait for the cheese to melt. Garnish with chopped green onions for some color and freshness.

You could use boneless chicken thighs instead of chicken breasts. For even more flavor, squirt some barbecue sauce on top of the chicken before serving. If you don't have mozzarella or cheddar cheese, use Gruyere, provolone, Swiss or muenster.

Ingredients

  • 8 slices thick-cut bacon
  • 4 thin-cut boneless, skinless chicken breasts
  • 2 - 3 tablespoons dry ranch seasoning
  • 1 1/2 cups shredded mozzarella or cheddar cheese
  • chopped green onions and tomatoes, for garnish (optional)

Here's how to make it:

  1. In a large skillet over medium heat, cook bacon until crispy, about 8 to 10 minutes. Transfer to a paper towel. Leave the bacon fat in the skillet.
  2. Season chicken with salt and pepper. Return the skillet to medium-high heat, add the chicken and cook until golden and just cooked through, about 6 to 8 minutes on each side.
  3. Reduce heat to medium, sprinkle chicken with ranch seasoning and top bacon and cheese. Cover the skillet and cook until cheese is melted and bubbly, about 5 minutes. Crumble additional bacon on the chicken and green onion and tomato, if desired, before serving.
