Garlicy Baked Chicken Recipe With Potatoes & Lemon: Save This Recipe

Baked chicken is such an easy weeknight meal. But baked chicken dishes are also great for company or weekend meals with family. This garlicy baked chicken recipe with potatoes and lemon is so full of flavor, you are sure to be asked for the easy recipe.

A mixture of olive oil, lemon zest, lemon juice, garlic, fresh thyme, oregano and parsley is whisked together in a large bowl. Chicken legs or thighs (or your favorite chicken pieces), potatoes and lemon wedges take a bath in the seasoned olive oil and are then put into a baking dish. The chicken bakes in the oven for about 40 minutes or until it is cooked through (165 degrees F internal temperature) and the potatoes are tender.

If you don't have fresh herbs, dried herbs could be used instead. Just reduce the amount to about half (always use less dried herbs than fresh in recipes if substituting). You could throw in a head of garlic that you've cut in half if you want to roast some garlic while this chicken dinner bakes. Rub the soft garlic flesh on pieces of toasted bread. Delish.

Squeeze the roasted lemon wedges over the chicken and potatoes for even more flavor. Serve this easy baked chicken recipe with a salad or crusty bread for a satisfying, comforting meal that will stick to your ribs.
