Amish Corn Relish Recipe: This Healthy Corn Relish Recipe Has a Shortcut

If I see an Amish recipe online or in a cookbook, I'm checking it out. Amish recipes are known for being downhome, simple and comforting. When flipping through Hello Taste, Goodbye Guilt! from the Mr. Food Test Kitchen, I discovered this easy Amish corn relish recipe. This corn relish is quick, fresh and versatile – and it has a shortcut to help get you out of the kitchen fast.

Frozen corn, canola oil, apple cider vinegar, chopped fresh parsley, chopped tomato, chopped green bell pepper, chopped green onions and a little sugar and salt are tossed together before being refrigerated for one hour. The shortcut in this recipe is using frozen corn. "OK, sure we can make this with fresh corn on the cob, but we thought that cutting it off the cob seemed like a lot of work, considering how fresh frozen corn tastes these days. The choice is yours," it states in the cookbook. I agree and fully support this culinary shortcut.

Serve this Amish corn relish as a side dish, appetizer with tortilla chips or use it as a topping for grilled chicken, fish or shrimp. It also makes a fun food gift in a mason jar. Don't forget to print the recipe to give with it!

Ingredients

  • 1/4 cup canola oil 
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1/8 teaspoon ground red pepper
  • 1 bag (16 ounces) frozen corn, thawed
  • 1 large tomato, coarsely chopped
  • 1/2 cup chopped green bell pepper
  • 2 green onions, thinly sliced

Here's how to make it: 

  1. Combine all the ingredients in a bowl.  Mix well.
  2. Cover and chill at least 1 hour before serving.
