French onion soup is a classic. The traditional French recipe is topped with a thick slice of bread or croutons and cheese before being broiled to melt the cheese and toast the bread. If you're eating a low-carb diet or on the keto diet plan, the bread isn't ideal. This easy low-carb French onion soup is made without bread, but you won't miss it. The soup is rich, full of flavor and will fill you up.

The soup base is made with butter, onions, garlic, bay leaves, fresh thyme leaves, beef broth and a little cornstarch to thicken. Wondering if you can eat onions while on a low-carb diet? It turns out that not all carbohydrates are created equal. When it comes to low-carb diets, eating bread is different than eating onions, and because of their strong flavor, you may typically eat less of them than other carbs.


The onions are first cooked in butter until they get rich, golden brown, sweet and caramelized. The finished soup is ladled into oven-safe soup bowls, topped with cheese and broiled until ooey, gooey and melty. Delicious!

Ingredients

  • 1/2 cup (1 stick) butter
  • 4 onions, sliced thin
  • 4 cloves garlic, minced
  • bay leaves
  • 1 teaspoon minced fresh thyme 
  • 4 cups beef broth
  • 1/4 teaspoon cornstarch
  • 8 ounces grated gruyere cheese

Here's how to make it: 

  1. Melt the butter in a large soup pot over medium-high heat. Add the onions, garlic, thyme and bay leaves. Season with salt and pepper. Cook, stirring often, until onions are soft and caramelized, about 15 to 20 minutes. 
  2. Reduce heat to medium-low and add the beef broth and cornstarch. Bring soup to a simmer and cook 10 minutes. (If you want the soup thicker, add more cornstarch.) 
  3. Ladle the soup into four oven-safe soup bowls. Sprinkle with the cheese. Put the bowls on a baking sheet and under the broiler until golden and melted.
