The soup base is made with butter, onions, garlic, bay leaves, fresh thyme leaves, beef broth and a little cornstarch to thicken. Wondering if you can eat onions while on a low-carb diet? Ingredients
- 1/2 cup (1 stick) butter
- 4 onions, sliced thin
- 4 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon minced fresh thyme
- 4 cups beef broth
- 1/4 teaspoon cornstarch
- 8 ounces grated Gruyere cheese
Here's how to make it:
- Melt the butter in a large soup pot over medium-high heat. Add the onions, garlic, thyme and bay leaves. Season with salt and pepper. Cook, stirring often, until onions are soft and caramelized, about 15 to 20 minutes.
- Reduce heat to medium-low and add the beef broth and cornstarch. Bring soup to a simmer and cook 10 minutes. (If you want the soup thicker, add more cornstarch.)
- Ladle the soup into four oven-safe soup bowls. Sprinkle with the cheese. Put the bowls on a baking sheet and under the broiler until golden and melted.
