How to Make a Quick Gravy for Roast Beef or Chicken! by Lynette Patterson
Nothing says comfort food more than roasted meat, mashed potatoes and gravy. The next time you roast a chicken or chuck roast, do this:
- Make a mirepoix mix (carrots, onions, celery and a garlic clove) and toss them in the bottom of your dry roasting pan. These veggies will roast with the meat.
- While the meat rests, take the veggies out. Use 2 tablespoons of drippings and 2 tablespoons of flour. Cook until brown, like a roux.
- Add a can of chicken or beef broth and stir to incorporate.
- Dump broth and half the veggies into a blender. Blend until smooth.
