Crazy Good Carrot Cake Muffins Recipe: These Moist Muffins Are Loaded With Delish Ingredients

Muffins are a fan favorite around 30Seconds. You can't get enough of our moist mommy muffins, cranberry orange muffins, chocolate chip muffins, apple cream cheese muffins and chocolate muffins. Another fan favorite is carrot cake, so we thought why not combine the two? You are going to devour these easy carrot cake muffins!

This carrot cake muffin recipe has a few ingredients, but they're all probably in your kitchen right now. The moist muffins are made with flour, baking powder, baking soda, cinnamon, ginger, vegetable oil, butter, sugar, eggs, vanilla extract, an overripe banana, grated carrots, shredded apple, chopped nuts and sweetened shredded coconut. How can that not be delicious? The ingredients are combined, spooned into muffin tins and then baked for about 20 minutes.

You can make a homemade cream cheese frosting for these muffins, or use a store-bought tub of frosting. These muffins are delicious without anything on top, but who can say no to creamy cream cheese frosting? Store these carrot cake muffins in an airtight container. Serve them as a snack, or if you add the frosting, for dessert

Ingredients

  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • large pinch of salt
  • 3/4 cup vegetable oil
  • 4 tablespoons butter, softened
  • 1 cup granulated sugar
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 overripe banana, mashed
  • 1 cup grated carrots
  • 1 apple, shredded
  • 1/2 cup walnuts or pecans 
  • 1/2 cup sweetened shredded coconut
  • cream cheese frosting (optional)

Here's how to make it: 

  1. Whisk together the flour, baking powder, baking soda, cinnamon, ginger and salt. 
  2. In another bowl, cream together the oil, butter and sugar with an electric mixer. Beat in the eggs, one at a time, until well blended. Add the vanilla, banana, carrots and apple. 
  3. Add the dry ingredients to the wet ingredients. Fold in the nuts and coconut. 
  4. Divide the batter between 16 muffin cups that have been lined with baking liners. Bake in a preheated 375-degree F oven for about 20 to 22 minutes. Remove and cool.
