Soft & Fluffy Copycat Pancake Recipe Tastes Like IHOP (No Tipping Required)

IHOP (aka International House of Pancakes) is known for its pancakes. The restaurant chain has sold millions of their soft, fluffy pancakes all across the country. If you love IHOP's pancakes, you can eat them without even leaving the comfort of your own home with this copycat recipe!

This copycat IHOP pancake recipe is made with all-purpose flour, baking powder, baking soda, salt, buttermilk, an egg, vanilla, melted butter and granulated sugar. The pancake batter is cooked in a skillet until golden on both sides. When cooking the pancakes, try not to press down on them. Pressing down will make your pancakes more dense and less fluffy.

Serve the hot, fluffy pancakes with butter, maple syrup, pancake syrup (try this three-ingredient pancake syrup recipe) or your favorite pancake toppings. If you want to recreate IHOP's Rooty Tooty Fresh 'N Fruity breakfast combination at home, serve the pancakes topped with fruit alongside two fried eggs or scrambled eggs and either bacon of breakfast sausage for breakfast or brunch.

  • You could stir some fresh blueberries or chocolate chips into the pancake batter.
  • For cinnamon lovers, stir some ground cinnamon into the batter.
  • For the fluffiest pancakes, do not overmix the batter.

Here's how to make it: 

  1. Whisk together the flour, baking powder, baking soda and salt in a mixing bowl.
  2. In another bowl, whisk together the egg, buttermilk and vanilla. 
  3. Add the wet ingredients to the dry ingredients.
  4. Stir in the melted butter and sugar until just combined. (Do not overmix.)
  5. Heat a skillet over medium-low heat. Pour about 1/3 cup of the batter into the pan to form pancakes. Cook until bubbles begin to form, then gently flip the pancakes over and cook until cooked through.
