Charcuterie Pizza Recipe: A Fun Way to Use Leftovers From a Charcuterie Board

We get all sorts of recipes and suggestions for using leftover holiday ham, leftover turkey and leftover chicken. But what about leftovers from a charcuterie board or meat and cheese platter? For Christmas Eve, I made a beautiful charcuterie board with two types of salami, Spanish chorizo, mortadella, sopressata, prosciutto and other meats, and cheeses like Parmesan, sundried tomato cheddar, white cheddar, gouda, Manchego, goat cheese, mild blue cheese and more. It was a hit with everyone, but I still had so much leftover. What to do? Make a charcuterie pizza!

For my pizza made with leftover ingredients from my charcuterie board, I started with a package of pizza dough mix that was in the pantry. You could use your favorite pizza dough recipe, a pre-baked crust, refrigerated crust or even frozen pizza dough. After the pizza dough is loaded with sliced meats and shredded cheese, bake it until hot and bubbly. I like to get the meats just slightly crispy. I only had red pizza sauce, but alfredo,pesto or even just a drizzle of olive oil makes a great base.

Serve this fun meat pizza recipe with a fresh garden salad for dinner or a quick lunch. You'll never stress about leftover cheese and sliced meats again! I also added some leftover olives, too, to one half of the pizza, but that's up to you. Other ingredients like capers, olives and sundried tomatoes would be really good on this pizza. And you can still make it even if you don't have leftovers! You can buy small amounts of these meats and cheeses at your deli counter.

Ingredients

  • your favorite pizza dough 
  • sliced charcuterie meats  
  • charcuterie board cheeses, shredded  
  • red pizza sauce, alfredo sauce, pesto or olive oil 
  • dried Italian seasoning or dried parsley flakes (optional)
  • crushed red pepper flakes (optional)
  • green or black olives (optional)

Here's how to make it: 

  1. Roll or press the dough onto a pizza pan, pizza stone or baking sheet.
  2. Top with desired pizza sauce.
  3. Add sliced meats and shredded cheeses and any additional toppings. 
  4. Bake in a preheated 425-degree F oven until crust is golden and toppings are hot.
