4-Ingredient No-Bake Strawberry Fool Recipe: Creamy Goodness in 20 Minutes

Do you like strawberries and cream? If so, you’re going to love Strawberry Fool! It’s essentially a fancier strawberries and cream. It’s a fruit dessert made with fresh fruit and whipped cream. It’s one of the easiest desserts you could make (ready in 20 minutes!), perfect for a last-minute get-together or when you’ve forgotten to make something for that potluck you keep forgetting about.

One of the reasons I love this Strawberry Fool recipe, besides the taste, is that it’s entirely natural. How often can we say that about the foods we eat? I love knowing exactly what I’m feeding my family. Another favorite is that this no-bake dessert is versatile. You can modify this recipe according to your preferences or what you have on hand. If you’re not a fan of strawberries, or don’t have any at the moment, I’ve found that any type of berry works well, including a mix of berries.

Ingredients

  • 1 cup heavy cream, chilled (it may not whip well if it’s not cold)
  • 2 cups fresh or frozen strawberries (or berries of your choice)
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla 
  • sliced strawberries, for garnish (optional)

Here's how to make it: 

  1. In a bowl, whisk or beat chilled heavy cream until light and fluffy. Be careful not to overbeat. Set aside or chill until ready to use. (If you don't use it right away and it separates, so whisk/beat it again for a few seconds.)
  2. Place strawberries in a bowl. Sprinkle with sugar and add vanilla extract.  Mash the strawberries with a fork, leaving some larger pieces. Let them stand for a few minutes.
  3. Fold about half of the mashed strawberries into the whipped cream. Reserve the remaining strawberries.
  4. Spoon some of the cream into four serving glasses. Top with some of the remaining mashed strawberries and another spoonful or two of the cream. Garnish with a few sliced strawberries on top. Serve immediately or place in the refrigerator until ready to serve.
