You don't need a lot of ingredients to make this creamy baked chicken curry recipe. Here is your short shopping list: butter, onion, apples, curry powder, flour, boneless chicken breasts, coconut milk (or regular milk) and fresh cilantro or green onions for garnish.

Ingredients

  • 3 tablespoons butter
  • 1 large onion, chopped
  • 2 apples, cored, peeled and chopped
  • 1 tablespoon curry powder (or to taste)
  • 3 tablespoons flour
  • 6 skinless, boneless chicken breasts, cut into large pieces
  • 1 cup chicken broth
  • 1 cup milk or coconut milk
  • fresh chopped cilantro and/or green onions, for garnish

  • You could put the chicken into a 13x9-inch baking pan and pour the sauce over the top.
  • Add some chopped carrots or red bell pepper.

Here's how to make it: 

  1. Melt the butter in an ovenproof skillet. Add the apple and onion and cook until soft, about 5 minutes. Add the curry powder and cook, stirring, 1 minute. Sprinkle in the flour and cook, stirring, 1 minute. Add the broth and milk. Whisk well. Season with salt and pepper. 
  2. Season the chicken breasts with salt and pepper. Lay them over the sauce mixture. Bake in a preheated 350-degree F oven for about 40 minutes or until chicken is cooked through (internal temperature of 165 degrees F). Stir and serve.
