Spanakopita Creamed Spinach Recipe: The Greek Way to Cream Spinach by Donna John

Spanakopita is a flaky Greek pie that's made with spinach and feta cheese. The flavors are a classic combination. When I saw a recipe for spanakopita creamed spinach (I love creamed spinach!), it had to happen. Creamy spinach with garlic, onion, cream cheese and feta? How could it not be delicious.
This creamed spinach recipe is a winning side dish for weeknight dinners or your holiday menus. If you want to fancy it up a bit, pour it into a baking dish, top with some buttered panko or breadcrumbs and bake until lightly browned.

Ingredients
- 2 tablespoons olive oil
- 1 small onion, sliced or chopped
- 4 cloves garlic, minced
- 3 packages (10 ounces each) chopped frozen spinach, thawed and squeezed dry
- 1 1/4 cups heavy whipping cream
- 1 ounce cream cheese
- 4 ounces feta cheese
- 2 tablespoons chopped fresh dill (or to taste)
- pinch of nutmeg
Here's how to make it:
- Heat the olive oil in a skillet. Add the onion and cook until soft, about 5 minutes. Add the garlic and cook 30 seconds.
- Add the spinach, cream and cream cheese. Cook, stirring, about 5 minutes.
- Stir in the feta, dill and nutmeg.
