​Dad Tiger’s Strawberry Heart Pancakes Recipe: What Daniel Tiger Eats for Breakfast

Ingredients

  • 1 1/2 cups (200 g) all-purpose flour
  • 2 teaspoons baking powder
  • pinch of salt
  • 2 eggs
  • scant 1 cup (230 ml) milk
  • 2 3/4 ounces (80 g) strawberries
  • butter, for greasing
  • maple syrup, for drizzling (optional)

Equipment

  • heart-shaped cookie cutter

Here's how to make it:

  1. Sift the flour and baking powder into a mixing bowl and add a pinch of salt. Add the eggs and the milk and whisk everything together until you have a pancake batter with no lumps.
  2. Wash the strawberries and remove the stalks, then cut the strawberries into slices. If they are big, cut the slices in half, too. Stir them gently into the pancake batter.
  3. Melt a little butter in a large non-stick frying pan over medium heat and carefully rub a little more butter around the inside of a large heart-shaped cookie cutter. 
  4. Place the cookie cutter in the pan and spoon in enough batter to coat the surface of the pan inside the cutter. Leave to cook for about 2 minutes, until you can see bubbles appearing on the top of the pancake. Carefully remove the cookie cutter (watch out, it may be hot!) and use a spatula to flip the pancake over. Cook the other side for another minute or so until golden, then remove from the pan and keep warm while you repeat to cook the rest. Serve the pancakes as they are or with a drizzle of maple syrup.

Notes

  • If you need to make your pancakes dairy-free, just substitute the regular butter for coconut butter and milk for plant milk.
  • If you need to make them gluten-free, substitute the all-purpose flour for a gluten-free blend.

Dad Tiger's Tip: The pancakes are yummy like this, but if you like, you can make a strawberry sauce to go on them, too. Just dice 1 cup (240 g) of strawberries and pop them in a saucepan with 2 tablespoons of water. Cook over medium heat for about 5 minutes until soft. Add 1 1/2 tablespoons of maple syrup and blend using an immersion blender. Serve warm drizzled over your pancakes.
